Allow me to put a disclaimer on this post by starting off with the fact that I, am by no means, a “TV person”. I don’t particularly enjoy it much at all. There are very few shows that can capture my attention long enough, or that I like enough to “make time” to watch. Once Upon a Time, however, is a very different story. Last week, we got together with friends of ours who we absolutely adore… you may remember, Mike & Julie? Anyway, Julie and I were painting our nails and she mentioned that she was excited for Once Upon a Time to start its new season on September 29th. Julie and I have the same taste in very many things, so I totally trust her opinion. Jarid downloaded the entire first season on Friday night… and we watched SIX out of TWENTY-TWO episodes just that night.
Yeah… it’s like the book that you never want to put down. Jarid and I literally watched it until we couldn’t anymore and our eyes got so heavy we couldn’t hold them open any longer.
Don’t worry, I dragged myself away from the TV for lots of other things this weekend, too. But each night ended with at least one episode 🙂 We’ve got to get caught up, and we have another whole season to get through.
Another neat thing I discovered this weekend? You get this nifty little certificate in the mail when you bust your butt to make Dean’s List 🙂
There was quite a bit of exercise this weekend as well. Not just the kind I do everyday, either…
…as appreciative as I am to have an elliptical, a stationary bike, an ab circle, and a treadmill in our basement (aka, the playground), I am incredible thankful when I get to mix up my routine a bit. Thus, the video I found on Pinterest from Melissa Bender. She’s my favorite!
Since we had two picnics this weekend, we found ourselves swimming, playing volleyball, kickball, and wiffleball during most of the day! Don’t worry, I took a break to eat, too.
Momma & Poppa always takes such good care of me. They had a sweet potato and green beans ready with a HUGE chunk of grilled chicken which I topped with marinara sauce (that small portion was only the butt of the piece!). I added my cheesy, zucchini quinoa to the green beans which came with peas and sauteed onions as well.
At home for one of my meals, I made a gluten-free chickpea pizza crust! It is my go-to from now on… mostly because it takes under two minutes to make 😉 Five simple ingredients: chickpea flour, water, salt, and oregano/rosemary.
For the crust:
- 1/3 C. chickpea (garbanzo bean) flour (I used Bob’s Red Mill)
- 1/4 C. water
- Herbs to taste (rosemary, oregano, basil)
- sea salt, to taste
Once you’ve combined these ingredients in a small bowl, you’ll want to mix thoroughly and scoop into a heated stove-top pan sprayed with non-stick cooking spray. The batter should be spread thinly and evenly to create the crust. Once the “crust” solidifies, you can add your toppings! My choices were some skim mozzarella and some marinara (or change it up with pesto and feta!) . Voila. You’ve got yourself a personal pan pizza!
At the Labor Day picnic, two birthdays were celebrated! Both cousins of mine, who are actually sisters.

I hogged Bo as much as I could when he needed an “escort” in the pool. Such a fantastic way to say goodbye to Summer! Here we go, Fall… we’re ready for you! Here’s to a four day work week!
