26-Year Celebration.

I can’t believe I’m married to such an old man! 🙂  Just kidding, honey.  I’m only a year behind you… remember that.  Anyway, this weekend, we got to celebrate Jarid’s 26 years of life with a bunch of wonderful friends and family.  Before I get to that part, though, I’ll share our morning:  Oompa Loompa Pancakes were on the breakfast menu — along with a green smoothie (unpictured)

After breakfast, there was a cardio/core workout in the basement:

ellipticalI was a sweaty mess when I finished, and headed upstairs to shower and get ready for church.  The message at CLA was a good one, for sure.  It was all about “Functioning in Dysfunction” and how to be more like Jacob in the Bible.

After the service, we slipped out pretty quickly to eat lunch and get home to change/pack up for the big party! I got some a salmon, avocado and cucumber brown rice sushi roll, some seaweed salad, and some extra veggies to round it out.  Hit. the. spot.


A quick pit stop at home, and we were off to the party site!  My Momma was kind enough to offer up their house for the location, since it’s about halfway between our house and the majority of the company’s.  Plus, it is the BEST place to host anything… there’s a deck, complete with little bistro tables, a canopy, a fire pit, a pool, and grass volleyball.  What more could we ask for as far as a party?!

poolThank GOD for the water, because everyone was ROASTING.  Even people who forgot to bring swimming suits were getting desperate and borrowing them from us so they could cool off!  Totally don’t blame them!

familyEveryone pitched in as far as food making, but of course, Momma outdid herself.  She took care of the hot dogs, hamburgers, buns, condiments, mac n’ cheese, and baked beans.  Not to mention, she ended up providing fresh pineapple and watermelon (which I was THRILLED about).  Nothing like fresh fruit on a hot day!

inlawsMomma Snyder and my Gram each brought a gigantic veggie trey (and ended up both sending leftovers home with me :D) and Momma Snyder also made Jarid’s favorite cake and brought blue icing so that we could decorate it together!

cakeThe handwriting ended up being pretty awful… but what can I say?!  The icing container was pretty difficult to write with.  It kept shooting out air bubbles one minute and then all of a sudden the icing would pump out faster than I could control the nozzle!  He couldn’t care less.. I think he was just so thankful to have the company of people who love him so much.  He has no idea that he’s probably the most easy guy in the universe to love ❤

My contributions were 5 tubs of ice cream, some chicken sausages, and Cheesy Cashew Gluten Free Pasta Salad

  • 1 box gluten free noodles
  • 2 C. fresh baby spinach
  • 1 large red bell pepper, chopped

for the dressing:

  • 1 C. cashews (soaked in water for at least 6 hours)
  • 3 tbsp. + 2 tsp. nutritional yeast powder or flakes
  • 1 C. water
  • 4 tbsp. apple cider vinegar
  • 2 tbsp. salt
  • Extra water to thin (just in case)


1- Cook the pasta according to package directions.

2- While the pasta is cooking, assemble your spinach & chopped red pepper in a large bowl (Tupperware is preferable and makes for easiest storing/transporting)

3- Blend together the dressing ingredients until smooth, which waiting for cooked pasta to cool a bit (it’s okay if there are little cashew pieces)

4- Toss together spinach, pepper, pasta, and dressing and refrigerate until ready to serve

*Note:  The pasta salad is best if you can make it a night ahead of time so the flavors really have time to soak in!  It won’t leave your spinach soggy, I promise!

tableIt really was such a perfect day.  After we ate, sang “Happy Birthday”, and had cake and ice cream, most of the party dispersed.  It was probably for the better because a HUGE storm was rolling in!  I was thrilled, however, that Amber & Simon stayed for a bit longer and we were able to chat for awhile inside.  I’m sure if you’re a blog follower, you’ve heard me talk about their beautiful little Gracie before.

gracieI was getting all kinds of Mommy tips from Amber (for when the time comes!– no, this is not a pregnancy announcement).  Before too long, the storm broke a bit, or I should say, the rain was no longer coming down horizontally, and it was almost Gracie’s bedtime, so they headed out.

Before Jarid and I left, we watched the storm for a little while with Momma and Daddy on the porch.

porchAren’t they just adorable?  🙂  Love them so much.  The did an fantastic job with the beach theme that I helped my Mom plan out on the porch, too!  I told her she really needs to get a Pinterest… that’s where I found all the ideas I sent her!  Check out one of their end tables!

barrelHave you ever watched a thunderstorm either from inside or on a covered deck?  Talk about peaceful…especially in the country setting that was set before us last night.  Jarid sipped on some hot black coffee, and we bundled up in sweatshirts on the glider.

usCannot wait to give him his presents from me on Friday (his actual birthing day! :)) I’ve got a little something special planned, too, for the weekend.  Stay tuned!
