Sick, Sicker, Sickest.

My poor husband had been sick since Memorial Day.  It’s almost inevitable that when you live with someone, you’re bound to eventually be plagued with anything contagious that they may have.  When Jarid is sick, all I want to do is coddle him, completely disregarding the fact that I’m making it much more difficult for my immune system to avoid the sickness… yeah, I knew it was coming.

I’m not advocating taking these two medicines together, but they sure have been working wonders for this chick.  Sorry if this is TMI… it’s your choice to read this blog 🙂

Anyway, my “sick girl” consolation prizes have been keeping my spirits up

On the left, some neon orange/red roses that Jarid brought home to me in order to feel better, and on the right, some pale pink peonies that Momma Snyder clipped from her flower beds.  She knows I love those blue-tinted mason jars!

How else am I helping my body fight the flu? I’m taking in important vitamins & minerals in things like… mushrooms, cauliflower & yellow peppers through dinner last night aka, a roasted medley of the three in grapeseed oil + salt, onion powder & garlic powder.

dinnerveggies“Mushrooms contain both selenium, which helps white blood cells produce cytokines that clear sickness, and beta glucan, an antimicrobial type of fiber, which helps activate “superhero” cells that find and destroy infections”[source].  For my “sauce”, I combined Garlic Lovers hummus + reduced sugar ketchup for another flu-busting combination.  “A British study found that people taking allicin supplements suffered 46 percent fewer colds and recovered faster from the ones they did get” [source]

I’ve also been sipping at this Kvass from Zukay Live Foods, which clearly reads on the label, “Immunity & Restorative Tonic

Another thing that will be sure to kick this illness to the curb?  TACO night at my family’s house tonight.  I’m beyond excited.  Dessert was up to me, so I made Katie’s Healthy Chocolate Fudge Zucchini Brownies last night. I already had the ingredients on hand, so it was the perfect choice and it only took me about 40 minutes to make!

Ingredients:

  • 1/2 cup shredded zucchini
  • 1/3 cup applesauce
  • 1 cup plus 2 tbsp water
  • 2 tsp pure vanilla extract
  • 3 tbsp flaxmeal
  • 1/2 cup plus 2 tbsp vegetable or coconut oil
  • 3/4 cup cocoa powder
  • 1 cup coconut flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 3/4 cup xylitol or sugar of choice
  • 1/16 tsp pure stevia extract, or 2 extra tbsp sugar
  • 1/2 cup mini chocolate chips, optional

 

Directions:

Preheat oven to 350F, and line a 9×13 baking dish with parchment paper. Set aside. In a large mixing bowl, whisk together the first 6 ingredients and let sit at least 5 minutes. (Tip: shred zucchini in a food processor for fine shreds.) Combine all other ingredients in a separate bowl, and stir very well.

Pour wet into dry, stir until evenly mixed, then pour into the baking dish. Using a full sheet of parchment or wax paper, press down very firmly until the brownie batter evenly covers the pan. Bake 19-20 minutes, then pat down hard with a pancake spatula or another sheet of parchment. Let sit 15 minutes before trying to cut into squares. Makes 20-24 squares.

I ended up having to add more water to thin the batter enough to make it spreadable, but other than that, they turned out perfectly!  I can’t wait to see what the family thinks tonight…

Oh!  And I also made some icing for on top, as per Katie’s frosting recipe:

  • 1/2 cup cocoa powder
  • 2 tbsp pure maple syrup or agave
  • 1/2 cup virgin coconut oil, melted

Mix frosting ingredients together to form a sauce. Spread sauce over the brownies, then fridge or freeze 10-20 minutes and the sauce magically transforms into fudgy chocolate frosting!

I’ll photograph the final masterpiece tonight at the meal! ❤ My Momma is so cute.  I offered to take care of bringing some of the ingredients for the dinner prep, but she insisted on getting them.  She even snapped a photo of the 0% plain Chobani in her shopping cart last night, which I told her is a great substitution for sour cream! 🙂  I love her so much.  She knows me inside and out!
