Things I Know Thursday.

Tuesday marked my 7th month as a married lady.


The first thing I know, on this Thursday, is that I have the worlds best husband.


He waited until I was asleep to sneak them onto the table, write in the cutest card ever, and place my favorite candy bar so perfectly up against the vase to surprise me first thing in the morning.


He didn’t say anything… he just let me find them.

Another thing I know, is that I can use the rest of those nasty seaweed-to-go things, that I despised, to create my very own delicious seaweed salad, courtesy of this recipe for dressing.


  • 30 grams (1 ounce) dry mixed seaweed
  • 1 tablespoon + 1 teaspoon rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon sweetener (Truvia)
  • 1/2 teaspoon salt (to taste)
  • 1/2 teaspoon ginger
  • 1 tablespoon toasted sesame seeds
  • 1 scallion, finely chopped

Along with my favorite sushi roll, of course.

Brown rice, salmon, avocado, & cucumber

Thank the LORD this is gluten-free.  I can’t imagine going without sushi entirely.

Another thing I know, is that when I run out of fresh baby spinach to throw into my morning smoothie, this Chocolate Amazing Grass sure does the trick to get a dose of greens!

I know that complimentary colors totally count as “matching” in my book.  With all the trendy neon pants and polishes, it can’t be wrong to wear them together 😉


Another thing I know on this Thursday, is that my thoughts and prayers are with those affected by the tragedies in Boston & Texas.


I can’t imagine that some could be so sadistic as to turn such a moment of joy, pride, and accomplishment into a moment of fear, chaos, and sadness for runners who participated and those supporting on the sidelines.
