What I’m Eating Wednesday.

I guess it sort of takes away from this whole idea of a themed post, but it’s whatever… I will never go back to being one of those bloggers who takes photos at EVERY single meal.  It’s part of my vow to live in the moment.  In light of that declaration, here are a few noteworthy eats as of lately.


This past weekend, Momma Cox invited Jarid & I over.  The hubs and Poppa Cox enjoyed the Cowboys vs. Steelers game, while Momma Cox & I got to work on some Christmas cookie baking.  For dinner, they ordered from a local pizza shop: ham & cheese stromboli, hawaiian pizza, and wings for the whole gang.  I had packed my own healthy dinner, because I don’t like to feel as though accommodations are necessary for my healthful eating habits… but, since that day, I’ve had a hankering for hawaiian pizza.  Thus, the following lunch break deconstructed pizza bowl:  1 lean hamsteak (110 calories – 20g of protein), 1/2 C. fat-free mozzarella cheese (90 calories – 18g protein), 1/2 C. light ragu (60 calories), 2 diced pineapple rings in 100% juice (60 calories).  I paired it with a side salad for some veggie power.  Totally hit the spot after I heated it up in the microwave and the cheese got all melty.

Instead of buying salad dressing at the grocery store, I’ve been making my own at home.  It’s ridiculously easy & inexpensive.  I even tote it around in a glass Annie’s Organic Lite Green Goddess bottle.  I don’t even measure  the mixture, I just squeeze a little bit of light mayo into the bottle, pour in some apple cider vinegar, dijon mustard, splenda, and lemon juice.  It’s pretty yummy.


Every single morning after my workout I make one of these green drinks.  Here’s the recipe I’ve come to love and it tastes just like a peanut butter milkshake.  I put them into my single serve blender:

  1. 5 ice cubes
  2. water (halfway up the cup)
  3. 1/2 large or 1 small banana
  4. large handful of baby spinach
  5. a little more water to top it off
  6. blend
  7. add 1/2 scoop of this protein powder – Ultimate ProFit Vanilla
  8. add 1/2 scoop peanut flour – I like this brand from Southern Grace Farms
  9. 1 tsp. salt (to bring out the sweetness & peanut butter flavor)
  10. 1 tsp. vanilla extract
  11. blend again
